Yummy White Wine Glazed Salmon !

We are going to start the month of August featuring amazing recipes using fresh ingredients and WINE! Makes our mouth water just thinking of all the great meals you can prepare using wine to enhance all the flavors in the dish!
Wine is often described as a living beverage. That's because flavors and aromas continue to develop in the bottle.
 
 
6 (5 ounce) salmon filets
 
                                                  4 cloves garlic, minced                                                    
                                                              1 tablespoon white wine (we used our fabulous Table White Wine for this recipe and as our Wine of choice to serve with the dish as well!) Yummy!!!
                                              (always use only Wine you would consider drinking)             
                                                              1 tablespoon honey             
                                                              1/3 cup balsamic vinegar
                                                              4 teaspoons Dijon mustard                                                    
                                                              1 tablespoon chopped fresh oregano

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  2. Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
  3. Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
  4. Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.
Serve this beautiful Salmon Dish with a side of pasta tossed with sautéed spinach, fresh garlic & parmesan cheese.  Amazing!

    Cyrano de Bergerac Inspired Our Trilogy!

    A beautiful home in Bergerac, France where we sourced our grapes for our YUMMY new McKenna 2010 Bergerac Trilogy! This stunning wine is a blend of Cabernet Sauvignon 50%, Merlot 40% and Malbec 10%.

    These toasty flavors are present but are
    very well integrated. The mouth is powerful with many round tannins. Prune,
    licorice, cedar wood and spice are some of the aromas developing after a few
    minutes. This wine will gain maturity for the next 6 to 7 years. Pair it with
    roasted turkey, chicken or game hens. Medium to strong cheeses such as
    Gruyere, Havarti or Colby will also pair well with this wine.

    The Order Of Tasting Wines!

    Order of Tasting

    Tasting should begin with white wines, and then move on to the red wines. Wines should be tasted in order of body-style, starting with light, then medium, and then full-bodied. (Light-bodied wines have the lowest alcoholic content, while full-bodied wines have the highest alcoholic content.) For whites, the order should be Riesling, Sauvignon Blanc and then Chardonnay. For reds, the tasting order would be Pinot Noir, Merlot, and then Cabernet Sauvignon. Other orders of importance are from dry to sweet, from young to old, from high acidity to low acidity, from light oak to strong oak, and from low tannins to high tannins.
    Before You Sip
    Swirl the wine in the glass to release the aromas. This practice is known as aerating, and helps mix the wine with air. Notice the droplets of moisture falling back into the glass. Strong and sweet wines stick to the glass, forming “legs” as they flow back into the wine. This is due to the higher alcohol level in certain wines, which adheres to the glass. Raise the glass to your nose and smell the aromas or bouquet of the wine. This is an important part of enjoying a glass of wine, as taste begins with smell.
    Aroma and Flavor
    For a young wine the aromas are actually the smell of the grapes, intensified by the fermentation process. Older wines develop more complexities (and therefore aromas and tastes) than do young wines. Smelling the aromas of wine will enhance the flavors soon to come with the first sip. Once in the mouth, the taste buds can detect a variety of flavors and textures, such as fruitiness, acidity, bitterness and tannins. Wine should be held in the mouth for a few seconds, and even swirled about, to release its flavors. After swallowing the wine, take note of the remaining flavor, which is often referred to as the “finish.” Good wines will have a lingering, pleasant finish, whereas lesser wines may have none at all or even leave an objectionable flavor in one’s mouth.

    Meet Alexandre Reble - Our Director of Winemaking
    Alex RebleA native of Bordeaux, France, Alex has over 18 years of wine making experience, working both in France and the United States. He began his studies at the Agricultural School of Libourne and Blanquefort, where he received degrees in Enology and Viticulture, as well as Wine Trade and Spirits. Alex’s wine career started in France working for internationally acclaimed wineries – Petrus, La Fleur Petrus, and Chateau La Tour Carnet. He also worked at the Chamber of Agriculture in Blanquefort, where he focused on biodynamic research in viticulture.

    Alex first came to Napa Valley in 1997, where he worked at such venerable estates as Beringer, Newton Vineyards, Flora Springs Winery, Twomey/Silver Oak Cellars, Cardinale, Matanzas Creek Winery and Anakota. He lives right here in the Napa Valley with his wife and two young daughters, Madeline and Olivia.

    Red wine and resveratrol: Good for your heart?

    Red wine and something in red wine called resveratrol might be heart healthy. Many doctors agree that something in red wine appears to help your heart. It's possible that antioxidants, such as flavonoids or a substance called resveratrol, have heart-healthy benefits. Antioxidants in red wine called polyphenols may help protect the lining of blood vessels in your heart. A polyphenol called Resveratrol is one substance in red wine that's gotten attention.

    How Many Bubbles In A Bubbly Wine?

    Interesting Facts! There are a approximately 40 to 50 Million Bubbles in a bottle of
    Sparkling Wine or Champagne! Who Knew?  
    Champagne wine is protected by an European regulation called Protected Designation of Origin (PDO). This European law protects the names of local products made in Europe.
    This law has been accepted recently by the American administration. However traditional makers of sparkling wine in the US who made this kind of wine before the administration accepted the European law can still call their wine Champagne. But new sparkling wine in the US cannot wear the name Champagne on the label any more.
    You should only chill Sparkling Wines/Champagnes for a maximum of 3 days, after that they start to lose their Bubbles therefore losing an important Essence of the Product.

    The robe of this Cabernet Sauvignon is dark and intense. The nose displays a complex aromatic combination of plum, spices and dry herb aromas. The mouth has a delicate attack and turns spicy and tannic after a few seconds. The French oak barrels are playing an immense role in the quality of this wine. But, in the magic of dusk, this shadowed flower becomes “Fleur Bleu” (FR: Blue Flower), lit by a rising moon or an early star. The magic of our Fleur Bleu wines will charm and delight you – revealing their mystery with subtle bursts of fragrance.

    Our 2012 Fleur Bleu Verdelho is displaying a light yellow robe. The wine has light white peach and honey aromas in the attack. After a while more mature notes of pear and resin are settling in. The flavors in the mouth are refreshing and crisp with a medium to high intensity acidity. The mid palate is silky with green apple and lime zest. This wine has a warm and mineral finish. These delicate flavors will pair very well with many Chinese dishes, seafood or turkey.

    Share a bottle of our yummy Homage 2012 California Merlot with a friend! Our Winery in Napa pays Homage to the early Father's of California grape growing. In this bottle you will find some of California's finest Merlot to share. The grapes are from the trusted Lodi appellation and our winemaker used  three special vineyard blocks to create this modern handcrafted artisan wine.
    Our Merlot has a rich and dark purple robe with a very complex nose. In the initial attack you will experience a lot of red cherry aromas then oaky flavors take over like coffee, light chocolate and caramel. The mouth will display more red fruits with cooked and jammy notes. The wine is very smooth with a good tannic structure, vanilla, toasty and smokey. There is a lot of power in this young Merlot which has a creamy silky finish. This one is Truly, a Diamond in the Rough! It will be reaching its peak in 3 to 4 years with a potential for agreeing after that of over 6 to 8 years.
    Pair this one with Mexican food, roasted pork, beef or bolder chicken recipes. The cheeses that best suit this beauty will be semi soft ones like Mozzarella, Monterey Jack and Swiss. Our featured recipe that comes with this bottle is our "Mushroom and  Swiss Stuffed Burgers."

    How Much Is Too Much? Or, Is It Ever Enough!

    Wine is a key component of any celebration. You can have sweet wines, sparkling wines, red wines for meals, and anything and everything in between!
    The first question people tend to ask is, how much wine should I get! To begin, a serving of wine is 5 oz. Whether you're mixing up a sangria or buying bottles of wine, take the total volume of liquid on hand and divide out by 5oz. That gets you the number of servings you have available.
    You figure a person can probably drink one of these servings every half hour, so to figure out what volume you need, multiply the number of people times the length of your party in half hours and you've got a rough idea.
    I find it's good to assume you have 20% White Zinfandel drinkers, 30% white wine (Chardonnay), 30% red wine (Cabernet), and 20% of other things. How about a Champagne toast? Again, 5 oz is a pretty good toasting glass. So maybe 5-6 glasses per bottle of Champagne, and figure from there.

    Freeze your leftover white wine in ice trays to quickly chill your white wines (frozen white grapes do a great job as well) or freeze any wine in zip lock bags to use in any recipe to really take your dishes to the next level. The alcohol cooks off so you can serve it to anyone, even the kids! Try our Halcyon 2011 Chardonnay. The Halcyon is a bird of classic legend.
